Traditional Almojábana Cake

    • Ingredients:

      • 4 to 5 Happy Bites Almojábanas.

      • 3 large eggs.

      • 1 cup whole milk (3.25%).

      • ½ cup sweetened condensed milk.

      • ½ cup fresh Latin white cheese or well-drained firm Ricotta cheese.

      • 2 tablespoons melted butter.

      • 1 teaspoon baking powder.

      • 120 g guava paste (Bocadillo / Guava Paste), cut into small cubes and lightly dusted with a little corn or wheat flour.

    • Preparation:

      1. Prepare Oven and Pan: Preheat oven to 180°C (350°F). Grease a rectangular baking dish or loaf pan and line with parchment paper.

      2. Almojábana Base: Crumble the Happy Bites Almojábanas into a large bowl.

      3. Blend Ingredients: Blend the eggs, whole milk, condensed milk, fresh cheese, melted butter, and baking powder until smooth.

      4. Combine: Pour the liquid mixture over the crumbled Happy Bites Almojábanas. Stir with a spatula and let it rest for 8 minutes for the dough to firm up and gain consistency.

      5. Assemble with Bocadillo: Pour half of the batter into the pan, spread the guava paste (Bocadillo) cubes over the entire surface, and cover with the remaining batter (you can also leave some cubes on top to brown).

      6. Bake: Bake for 35-40 minutes until the cake is firm and has a golden caramel color. Let it cool slightly before unmolding and cutting into squares.
