Traditional Shredded Beef Stuffed Arepa

    • Ingredients:

      • 4 Happy Bites Arepas (white or cheese).

      • 500g flank steak (Flank Steak or Bavette).

      • 3 finely chopped green onions (Green Onions / Scallions).

      • 2 ripe Roma tomatoes, diced into small cubes.

      • 2 cloves of garlic, minced.

      • 1 teaspoon ground cumin.

      • 1 teaspoon paprika.

      • 1 cup of the meat cooking broth.

      • 1 tablespoon vegetable oil.

      • Salt and pepper to taste.

      • Crumbled fresh cheese or Feta cheese for serving (optional).

    • Preparation:

      1. Shredded Beef: In a pressure cooker or Instant Pot, cook the flank steak covered with water, salt, one green onion stalk, and one clove of garlic for 45 minutes (or 1.5 hours in a traditional pot) until tender. Remove the meat, shred it with two forks, and reserve 1 cup of the broth.

      2. Hogao: In a pan over medium heat, warm the oil and sauté the green onion and garlic for 2 minutes. Add the diced tomato, cumin, paprika, salt, and pepper. Cook over low heat for 8 minutes until a thick sauce is obtained.

      3. Combine: Add the shredded beef and the reserved cup of broth to the hogao. Cook over low heat for 10 minutes until the meat absorbs all the flavor and becomes juicy.

      4. Happy Bites Arepas: Heat the Happy Bites Arepas in a non-stick pan, grill, or toaster over medium heat until golden and crispy on the outside and soft on the inside.

      5. Assemble: Open each warm Happy Bites Arepa in half with a serrated knife, generously fill with the shredded beef, and top with a sprinkle of crumbled cheese.
