Traditional Colombian Sancocho with Fried Arepa

    • Ingredients:

      • 4 Happy Bites Arepas.

      • 1 kg chicken pieces (thighs/drumsticks) or beef ribs (Short Ribs).

      • 1 green plantain, peeled and torn by hand.

      • 400 g fresh or frozen cassava/yucca.

      • 3 medium potatoes (Yellow or Russet Potatoes), peeled and cut in half.

      • 2 ears of sweet corn, cut into thick slices.

      • 1 bunch fresh cilantro, chopped.

      • 3 chopped green onion stalks and 3 crushed garlic cloves.

      • 1 teaspoon cumin and 1 teaspoon paprika or triguisar.

      • Vegetable oil for frying.

      • Salt and pepper to taste.

      • Avocado and lime for serving.

    • Preparation:

      1. Sancocho: In a large pot, add 10 cups of water, the green onion, crushed garlic, cumin, paprika, and salt. Bring to a boil and add the chicken pieces and green plantain. Cook over medium heat for 25 minutes.

      2. Add the corn, yucca, and potatoes. Cook over medium-low heat for another 25 minutes until the root vegetables are tender and the broth has naturally thickened. Add the chopped fresh cilantro 5 minutes before turning off the heat.

      3. Fried Happy Bites Arepas: Heat 2 cm of oil in a pan over medium-high heat (175°C). Place the Happy Bites Arepas and fry for 3-4 minutes per side until they have a deep golden color and an extra crispy texture. Drain on paper towels (you can also brush them with oil and put them in the Air Fryer at 200°C for 8 minutes).

      4. Serve: Serve the steaming sancocho in a deep bowl with your fried Happy Bites Arepa, fresh avocado, and white rice.
