1 green plantain, peeled and torn by hand.
-
400 g fresh or frozen cassava/yucca.

3 medium potatoes (Yellow or Russet Potatoes), peeled and cut in half.

1 bunch fresh cilantro, chopped.

3 chopped green onion stalks and 3 crushed garlic cloves.

Preparation:
-
Sancocho: In a large pot, add 10 cups of water, the green onion, crushed garlic, cumin, paprika, and salt. Bring to a boil and add the chicken pieces and green plantain. Cook over medium heat for 25 minutes.
-
Add the corn, yucca, and potatoes. Cook over medium-low heat for another 25 minutes until the root vegetables are tender and the broth has naturally thickened. Add the chopped fresh cilantro 5 minutes before turning off the heat.
-
Fried Happy Bites Arepas: Heat 2 cm of oil in a pan over medium-high heat (175°C). Place the Happy Bites Arepas and fry for 3-4 minutes per side until they have a deep golden color and an extra crispy texture. Drain on paper towels (you can also brush them with oil and put them in the Air Fryer at 200°C for 8 minutes).
-
Serve: Serve the steaming sancocho in a deep bowl with your fried Happy Bites Arepa, fresh avocado, and white rice.
